Together in Hong Kong, Mott 32’s culinary team, and Pierre Hermé challenged the standards of tastes and techniques to create perfect ingredient pairings. Testing various combinations and spices such as cumin, cinnamon, almond, jasmine, kumquat and even exploring the potential of using duck fat to replace butter as an ingredient, the teams created something truly unique.
